How this calculator works

Every row below is one of the twenty-four jars in the book, with the figure Chapter 10 arrives at for a family of four that cooks the way the table assumes. Two things make the number defensible, and both are yours to change.

The prices are neighborhood-supermarket prices — Kroger, Safeway — not warehouse-club or supercenter prices. If you shop at a large discount chain you’ll find several of these products cheaper than I’ve listed them, and your savings will be correspondingly smaller, because you were already paying less for the thing you’re replacing. That cuts the other way too: shop somewhere expensive and every number in the table gets better. Prices are illustrative U.S. figures checked in 2026; they vary by region and change over time.

Every row compares the same amount of finished food on both sides. Not a jar against a box — a pancake against a pancake, a pan of brownies against a pan of brownies, a cup of gravy against a cup of gravy. Where the box has something built in that we buy separately (the chocolate chips, the pasta, the beans), that cost is charged to our side. The “Compared at” column says what was made equivalent in each row. Two jars in the book don’t beat the store once you do that accounting — the Mac & Cheese Powder (§3.2) and the Beef & Bean Skillet Starter (§3.5) — and both count zero here, exactly as they do in the book.

What to edit. The “Times a year” column is the frequency the book assumed. Change it to how often your household would actually use that jar and the row recalculates. The “Saving per use” column is the book’s per-use figure at book prices; if you’ve priced the store product at your own store and want to push the number up or down, edit it. Your edits are saved in this browser and survive a reload. “Reset” puts the book’s figures back.

Don’t expect the total to match anyone else’s. The book’s worked example lands at about $500 a year; a household that bakes every weekend and eats oatmeal every morning will land higher, and one that only wants the seasoning shelf will land lower — and be right.

Read this before you chase the lowest number. The lowest price per ounce is not the best purchase if half the tub goes stale before you reach the bottom. Baking powder is the one ingredient §1.4 tells you never to buy in bulk, for exactly that reason, and oats are a buy-what-you’ll-finish-this-season ingredient — pair this table with the Shopping List page.

How to use the label sheet

Tick the jars you built, set the date you built them, and print. Each label carries the four things the Batch & Label Protocol asks for — the mix name, the “just add” line, the made-on date and the best-quality-by date — with the shelf-life window from that recipe’s card already applied. The date on the label is a quality window, not a safety deadline: it’s the point past which the leavening weakens or the milk powder starts to taste of the cupboard, and the book uses “best quality by” everywhere for that reason. Never “use by”.

Print on plain paper and tape (painter’s tape peels clean off glass), or on 2 × 4-inch address labels — the sheet is laid out ten to a page to fit either. A fine-point permanent marker rated for tape and glass is the only pen that survives a kitchen; write anything you add by hand with that.

Whole jar or scoop? Every label says which. Seven mixes in the book go into the bowl whole; the rest are scooped by the cup or the tablespoon. The full grid:

Gift tags

A gift tag is a label with two more jobs: it has to tell a stranger what’s in the jar, and it has to look like you meant it. Chapter 9 §9.2 fixes six elements, in this order, and the tag builder prints all six:

  1. The mix name.
  2. Ingredients, with the major allergens called out — wheat and milk are the two that occur across the twelve foundation ingredients, and the tag names them plainly rather than hoping the recipient reads the list.
  3. The “just add” line — what to add, how much, and how hot, in one sentence.
  4. Made on and best quality by.
  5. How to store it — lid on, cool and dry, dry spoon.
  6. Who it’s from.

Tags print at 3 × 4 inches — roughly an index card, the honest minimum for a working “just add” line — four to a page, on card stock.

Making the jar look deliberate

The lid. A two-piece canning lid with a kraft-paper or fabric round trapped under the band: cut a 5-inch circle, cut it with pinking shears so the edge can’t fray, lay it over the flat lid, screw the band down over it. No sewing, no glue. Plain brown kraft looks better than most fabric and costs nothing. Skip the round entirely on a jar you’re mailing — it snags, slides, and arrives crooked.

Twine and ribbon are not the same signal. Cotton butcher’s twine reads as food and belongs on savory jars. Satin reads as gift shop and looks faintly wrong around a jar of gravy mix. Grosgrain is the compromise, and unlike satin it holds a knot. Three wraps around the neck, a square knot on the front, tails cut on a diagonal to about two inches. A bow on a cookie jar is charming; a bow on a steak seasoning jar looks like you weren’t paying attention.

Jar choice. Regular-mouth jars beat wide-mouths for gifting: a regular mouth has an actual shoulder and neck instead of being a tube, and the neck gives twine somewhere to sit instead of sliding down.

The pre-lid checklist — what makes a jar read as amateurish. All of it is fixable before the lid goes on.

Mailing. Give a glass jar two inches of padding on all six sides and tape over the band so it can’t back off. For anything going more than a state or two, skip the glass entirely: fill a heavy freezer-weight pouch using the flat-pack method from §1.5, press the air out from the bottom up, and let the recipient decant.

Tag-making tools.

  • Card stock, 65 lb (176 gsm) at a minimum. Regular printer paper curls, wicks ink, and goes soft in a humid kitchen. Kraft-brown card stock is cheap, forgiving, and makes almost any handwriting look deliberate.
  • Cut tags to about 3 × 4 inches — roughly an index card, the honest minimum for a working “just add” line.
  • Punch the hole in a corner, not the centre of the top edge. A corner hole pulls against two edges of the stock. A top-centre hole pulls against a quarter-inch of paper and tears the first time the tag catches on something.
  • Ink that dries. A fine-point permanent marker — the same one from the §1.1 bench that writes on tape and glass — is the safest tool on kraft. Ballpoint skips on it, gel pen smears for a full thirty seconds, and pencil fades to nothing inside a year. Write the tags first and let them sit while you fill the jars.

How the tracker works

Add a jar, pick the mix, enter the day you made it. The best-quality-by date fills itself in from that recipe’s shelf-life window, and the row changes color as the date approaches: green while there’s time, amber inside sixty days of the stamp — the same threshold the monthly restock uses for “goes to the very front of the shelf” — and red once it’s past. Past is not a safety verdict; it’s the point to run the leavening test on anything that rises and to use the jar where the rise matters less.

Jars are saved in this browser. The list is built for a shelf of eight to twelve active jars with the rest rotating — that’s the working size Chapter 1 §1.6 and Chapter 9 §9.5 both settle on. A twenty-four-row grid that implies you’re behind isn’t the point; a shelf you can see the whole of is.

The two-row shelf

  • The front row is the working shelf: jars you’re scooping from this month.
  • The back row is the deep shelf: sealed and untouched.
  • Traffic runs one direction only. The deep shelf feeds the working shelf, and nothing ever moves back the other way.
  • A jar that’s been opened stays on the working shelf until it’s empty.
  • For a cabinet too shallow to hold two rows, use two shelves and treat the higher one as the deep shelf. Same rule, vertical.

The quarterly shelf hour

Four dates a year: the first Saturday of March, June, September, and December. If the tracker is doing its job you never need this chart — it’s the paper fallback, and it’s what the tracker’s dates are built from.

Four dates a year against a 6-month stamp means no jar can go more than three months unexamined, which is the margin that makes the whole thing work.

The 18-month group is made once a year and still gets the quarterly look, just with less urgency. The 6-month group is quarterly at most — make that jar when you know you’ll bake.

The nose test

Use your nose as a check alongside the best-quality date, not instead of it. These are the standard descriptors for how these ingredients go off:

The seasoning row is the one people miss, because nothing is obviously wrong. A blend that has quietly stopped smelling like itself will quietly stop tasting like itself too. The cardboard note in cocoa is the cocoa-butter version of the crayon note in milk powder — same chemistry, different fat.

Three habits that beat any routine

Three habits do more for shelf life than any calendar, and they cost nothing:

  1. Never scoop with a spoon that’s touched anything wet.
  2. Never open a jar over a steaming pot — the seasoning shelf especially, where onion powder pulls water out of humid air fast enough to turn a jar into a puck by evening.
  3. Put the lid back on before you measure the next thing, not after.

If a jar cakes anyway: clumping by itself doesn’t prove spoilage, but moisture exposure is one of the things that causes it — so look and smell before you use it rather than assuming it’s automatically fine. A caked jar that looks and smells normal usually just needs breaking up with a fork, and that is the single most common reason a perfectly good jar of homemade mix ends up in the trash instead.

Why every stamp is a hedge

Keeping added fats out of the jar removes one important source of quality loss, but it isn’t a guarantee on its own: storage time still depends on the specific ingredients and conditions in each jar. Every stamp in the book is a conservative window based on standard food-safety guidance for shelf-stable dry ingredients, not a deadline and not a test result. A boxed mix with the fat already built in — the kind that lets a brownie box say “fudge” on the front — holds a year or two rather than indefinitely, for exactly the reason this system keeps fat out of the jar.

Two jars worth knowing the “why” for: the Blueberry Muffin Mix (§5.3) is the most stable jar on the breakfast shelf — no fat, granulated sugar rather than brown, and baking powder with no soda alongside it to worry about; the milk powder is the only limiting factor. The Hot Cocoa Mix (§6.1) has milk powder at under a third of the jar, which is why it stamps at 12 months where §3.2 and §4.3, both more than half milk powder by volume, stamp at 9.

The chart above covers the twelve foundation ingredients only, because those are the only things that go in a jar. Type a number in either column and the other side updates. The gram figures are the ones the book’s Recipe Cards use, and they’re why the book gives every jar in grams: a cup of flour weighs whatever your filling method makes it weigh, and a scale doesn’t care.

Three ingredients on the twelve-ingredient shelf pack down badly in a cup and are worth weighing every time — rolled oats, brown sugar, and anything with a lot of cocoa in it. Hot Cocoa Mix is the clearest case: it packs unevenly, so ¼ cup = 31 g per mug is the figure to trust, not the scoop.

Jar capacities

How much mix a jar holds depends on the recipe and how densely it settles, so treat these as typical ranges, not properties of the jar.

Ranges vary by recipe and density. The Recipe Card for each mix states the jar it was written for; when in doubt, fill to the shoulder and read the card.

Diet conversions, jar by jar

Everything in this section inherits Chapter 8’s fifth rule: these numbers are reasoned from baking principles, not settled by test pans. Make a half batch first and write what you changed on the tape. The safety guidance in the book — cross-contact, the potassium warning, the FDA gluten-free threshold, the medical disclaimers — is not a starting point and is not repeated here in weakened form. Read it in the book before you use any of this, and anyone cooking for a medically necessary diet should read every ingredient label independently.

Part 1 — Gluten-free, mix by mix

Every swap below is the same weight of a 1:1 measure-for-measure blend with a binder for the same weight of all-purpose flour. Everything else in the jar stays as printed unless noted.

Chapter 2 — the baking shelf

All-Purpose Baking Mix (§2.1). 360 g of all-purpose flour out, 360 g of 1:1 blend in. Everything else in that jar — the baking powder, the milk powder, the tablespoon of sugar, the salt — is already gluten-free and stays exactly as written.

Of the four uses, pancakes and waffles are the ones the principles say should convert most easily: they’re thin, flat, and nothing has to hold itself up. Add 2 tablespoons of extra water to the ¾ cup, and rest the batter five minutes rather than two.

Drop biscuits should follow, because drop is the friendliest shape there is — no gluten network is being asked to hold anything up. Add 1 to 2 tablespoons of extra water to the ⅓ cup, let the dough sit ten minutes before you drop it, and expect it to look wetter and stickier than the wheat version. Same 450°F, and check at 12 minutes rather than 10; the sides should feel dry and set.

The dumplings are the use where I’d expect the difference to show most. A dumpling cooks in steam with no browning and no crust to distract you from the crumb, so a denser, gummier texture has nowhere to hide. Give them 14 minutes covered instead of 12, and still don’t lift the lid.

Buttermilk Biscuit Mix (§2.2). 360 g out, 360 g in, plus 2 to 3 tablespoons of extra water to the ½ cup of vinegar-water.

The full reasoning is in the book: this is the Chapter 2 recipe that depends most on gluten, because lamination works by building a network and then layering it. Make the drop-biscuit cobbler topping version instead of the cut biscuits — spoonfuls dropped onto hot fruit or a bubbling stew, 425°F for 18 to 22 minutes. That’s the use I’d expect to survive the swap intact, because a topping that’s supposed to be craggy doesn’t care that it can’t be laminated.

If you want cut biscuits anyway: pat, never roll; keep the dough wetter than feels right; press the cutter straight down without twisting, same as always; and judge doneness by deep gold on top and dry sides rather than by looking for a seam, because there won’t be one.

Skillet Soda Bread Mix (§2.3). Two routes.

Route 1 — bake it in a pan. Grease an 8-inch round cake pan or a 9×5 loaf pan and let the walls do what the gluten was doing. Everything else stands: the whole jar, 1¼ cups of water with 2 tablespoons of vinegar, 3 tablespoons of melted butter, the cross cut a good half-inch deep, 400°F. It runs longer than the free-form loaf, more like 45 to 50 minutes. The hollow-knock test doesn’t read the same on a gluten-free loaf, so use the skewer and the temperature instead: 200 to 205°F in the center. Cool it a full hour rather than thirty minutes, because a gluten-free loaf cut warm goes gummy even faster than a wheat one.

Route 2 — soda farls. The stovetop version in §2.3: dough patted flat to ¾ inch, cut into quarters, cooked on a dry griddle about 7 minutes a side. This is the version I’d start with, and for a straightforward reason. A farl is only three-quarters of an inch tall. It has almost nothing to hold up.

Banana Bread & Quick Loaf Master Mix (§2.4). 270 g out, 270 g in, and change almost nothing else.

On paper this is the Chapter 2 jar with the least riding on gluten: the batter is heavy and wet — three mashed bananas, two eggs, half a cup of fat — and the lift comes from baking soda meeting the acid in the fruit rather than from any structure the flour builds. Rest the batter twenty minutes in the pan before it goes in the oven, add 5 to 10 minutes to the bake, and use the skewer rather than the clock. Gluten-free loaves are commonly reported to firm up overnight as moisture redistributes, so if day one seems crumbly, try it again on day two before you judge it. The zucchini, pumpkin, and applesauce versions rest on the same wet-batter logic, so I’d treat them the same way.

Chapter 3 — the dinner shelf

Three of the five dinner mixes contain flour — §3.1, §3.2 and §3.3, three-quarters of a cup each — and in every one the flour is a thickener, not a structure builder.

Option A: the 1:1 blend, straight across. 90 g of blend for 90 g of flour in each. The flour is only thickening, and a 1:1 blend thickens, so there’s nothing structural to lose. The caveat is that a rice-based blend can leave a faint graininess in a sauce that never gets hot enough or long enough to fully cook it out — more noticeable in a bowl of soup than in a casserole that’s been in the oven half an hour.

Option B: sweet rice flour, often the better choice for soup. Sweet rice flour — sold as mochiko, usually in a small box in the international aisle — is a classic gluten-free thickener for a white sauce, and it swaps 1:1 by weight for wheat flour. It’s generally a smoother, less grainy thickener than a starch-heavy blend and tends to hold up well through reheating. If you’re converting the Cream of Anything base (§3.1) and expecting to use it in soup rather than only as a casserole binder, this is what to reach for.

Either way, the cornstarch already in those jars — ⅓ cup in §3.1, ¼ cup in §3.2 and §3.3 — is gluten-free as it stands and doesn’t change.

§3.4 and §3.5 contain no flour at all. Cornstarch, onion powder, salt, brown sugar, garlic powder, and in §3.5 the cocoa. Watch what goes in the pot alongside them — broth, canned beans, and canned tomatoes are the usual places a wheat-based additive turns up, so read those labels once and then buy the same brand.

Two activation notes that matter more than the jars do:

Pasta. §3.2’s macaroni and §3.3’s egg noodles are the real gluten in those dinners. Gluten-free pasta goes from firm to mush in about ninety seconds and keeps softening in the sauce afterward. §3.2 tells you to pull the pasta two minutes early — for gluten-free pasta, pull it three, and taste rather than trusting the box. It also sheds far more starch into the water, which means the sauce will tighten more than usual once the pasta goes in. Keep a cup of the pasta water and loosen the sauce with it a splash at a time.

The pot pie top. §3.3’s chicken pot pie finishes with drop biscuits from §2.1 or §2.2. Use the gluten-free drop-biscuit guidance above, mix the dough a touch wetter than you would for a plain drop biscuit, and keep the gaps between the spoonfuls — steam still has to get out, and a gluten-free lid of dough stays raw underneath just as reliably as a wheat one.

Chapter 4 — nothing to do

Every one of the six seasoning jars has no gluten-containing ingredients as formulated. Cornstarch, salt, onion powder, garlic powder, brown sugar, coarse salt, granulated sugar, cocoa — that’s the entire ingredient list across the whole chapter. For a household where gluten avoidance is medically necessary, that means checking that your specific brands of those ingredients are themselves labeled gluten-free and made without shared-equipment risk.

Chapter 5 — the breakfast shelf

Classic Pancake & Waffle Mix (§5.1). 330 g of flour out, 330 g of blend in. On the principles, this is the jar with the least to lose: nothing here depends on gluten. A pancake is thin, cooked flat on a griddle, and doesn’t need to hold anything up, which means the two things that usually go wrong with gluten-free baking simply don’t apply.

Add 2 tablespoons of extra water to the cup, and rest the batter a full ten minutes rather than five; it thickens more than the wheat batter does, so check it before you pour and thin it if it’s stopped ribboning off the whisk. Everything that made this jar worth having over §2.1 is untouched, because the browning comes from the ¼ cup of sugar and the ½ cup of milk powder, and neither of those changes. Waffles should follow the same logic, and the extra fat in that version can only help a crust that’s no longer getting help from gluten.

Instant Oatmeal Packets (§5.2) and Granola & Trail Mix Base (§5.4) — the oat note. Neither jar has a speck of flour in it. See the FDA gluten-free-labeling guidance in the book before you buy; the practical upshot is that you buy oats labeled gluten-free, they cost somewhat more than a plain ten-pound bag, and that’s the entire adjustment: same recipe, same technique, same six-month stamp. The trick in §5.2 where you pull 2½ cups of the oats back out and pulse them into a coarse flour works identically with certified oats — they’re the same flake.

Same note applies to the ½ cup of oats in §2.4’s Banana Bread Mix and the 1 cup in §6.2’s streusel.

Blueberry Muffin Mix (§5.3). 300 g out, 300 g in. Keep the 2 tablespoons of cornstarch — it’s already gluten-free and it’s still doing the cake-flour job of softening the crumb. One exception: if your blend lists a starch as its first ingredient rather than rice flour, the mix is already starchy enough, and you can swap that cornstarch back for an extra 2 tablespoons of blend to get a sturdier muffin.

Rest the batter fifteen minutes after folding, before you scoop. The flour-toss that keeps the berries suspended works exactly as written — use a tablespoon of the gluten-free dry mix. The 400°F blast dropping to 375°F still helps, but a gluten-free crumb has less structure setting up early, so expect a gently rounded top rather than the mushroom cap.

Chapter 6 — the dessert shelf

Hot Cocoa Mix (§6.1). No flour. Gluten-free as written, nothing to do.

Brown Sugar Oat Streusel Topping (§6.2). 180 g out, 180 g in, gluten-free-labeled oats, and cut in the cold butter the same way. Nothing in a streusel depends on a gluten network — cold butter and sugar do the clumping and the crisping — so I’d expect all three uses, the muffin topping, the fruit crisp, and the toasted ice cream crumb, to need no adjustment.

Chocolate Chip Cookie Mix (§6.3). 300 g out, 300 g in. Then change one thing: chill the dough 30 minutes, not 10. Gluten-free doughs spread more, because there’s no protein network holding the edges together against melting butter, and a warm gluten-free cookie dough will run into one continuous sheet on the pan.

Gluten-free crumb is widely reported to read sandy straight out of the oven and to settle overnight as moisture redistributes, so don’t judge the batch in the first hour. Of the three uses, the bar cookies and the skillet cookie ask the least of the dough, because the pan holds the edges in place while it sets — if you’re converting this jar for the first time, start with one of those.

Brownie Mix (§6.4). 120 g out, 120 g in. On the ratios this is the jar where flour matters least: a fudgy brownie is two cups of sugar to one cup of flour, so the flour is a minor structural player, and the texture you’re aiming for is dense, moist and slightly under-set — which is where a gluten-free crumb lands on its own. Same 350°F, same 25 to 28 minutes, same toothpick-an-inch-from-center test.

Yellow Cake Mix (§6.5). 240 g out, 240 g in — the hardest dessert conversion, because a two-layer cake has to hold its own weight, hold a filling, and survive being turned out of a pan.

The reverse-creaming step still works — beating fat into the dry mix before the liquid arrives is about coating flour particles in fat, and that happens regardless of what the flour is made of — but it has less to accomplish, since there’s no gluten development to limit in the first place.

Bake it as cupcakes or a sheet cake rather than two 9-inch rounds. Both are supported by their pan or paper for the whole life of the cake. If you want the layers anyway, cool them completely in the pans before turning out — a warm gluten-free layer will crack across the middle — and expect a tender, slightly fragile crumb: a different cake from the one in §6.5, worth judging on its own terms rather than against it.

What a gluten-free conversion costs

A 1:1 gluten-free blend costs several times what all-purpose flour costs per pound. A gluten-free version of the pancake jar or the cookie jar lands at roughly two to three times the price of the wheat version — still nowhere near the $6.99 box, but not the eighty-percent-off number the rest of the book quotes. The jars where flour is a minor ingredient barely move: the brownie mix has one cup of flour in a three-cup jar, and the gravy mix, the steak seasoning, the onion soup mix and the bean base don’t move at all.

Part 2 — Reduced-sodium: the full ingredient tables

All nine savory jars, same format, same shape: salt down by roughly two-thirds; where the jar leans on dried allium, onion powder up by about a third and garlic powder up by about half; nothing else moves. Thickeners are deliberately untouched so every activation ratio in the book still holds.

Read the potassium-chloride warning in §8.2 before using any salt substitute alongside these. Anyone on a prescribed sodium limit should take these tables to the person who prescribed it, not treat them as clinical guidance.

§4.1 — All-Purpose Savory Gravy & Sauce Mix

Salt drops from ¾ teaspoon per cup of gravy to a scant ¼. The cornstarch doesn’t move, deliberately, so the 2-tablespoons-per-cup activation and the thickening ratio both stay exactly where they were.

At the stove: use unsalted broth or the drippings from an unsalted roast, and finish each cup off the heat with ½ teaspoon of cider vinegar and a hard grind of black pepper — harder than feels reasonable, the same way §4.2 tells you to pepper a steak. The pan-drippings version in §4.1 is the one I’d reach for here, because scraped-up browned fond is savory depth that has nothing to do with salt.

§3.1 — Cream of Anything Soup Base

Half a teaspoon per can-equivalent down to a scant quarter. Both thickeners are untouched, so the ¼-cup-into-1-cup-of-cold-liquid rule holds.

Then work the version rather than the jar. For cream of mushroom, brown the mushrooms harder than §3.1 asks — the full 8 minutes until the pan is dry and the edges are genuinely browned — because that browning is savory depth you’re getting for free. For cream of celery and cream of chicken, finish off the heat with a squeeze of lemon. For country gravy, black pepper, heavily. And let it bubble the extra minute §3.1 recommends for anything you’re eating as soup: cooking the raw flour taste out matters more when there’s less salt covering for it.

§4.3 — Ranch Seasoning Powder

The dip needs more help than the dressing does, and the reason is instructive: the dressing already has a tablespoon of vinegar in it, so it arrives with its acid built in. The dip is straight sour cream. Add 1 teaspoon of white vinegar or lemon juice per cup of sour cream, and extend the chill from 30 minutes to a full two hours — with less salt in the mix, the dip depends even more heavily on the onion and garlic powder finishing their hydration, and §4.3 was already clear that dehydrated allium tastes dusty until it’s pulled water back out of the dairy.

If you keep chives or parsley, this is the version to use them on. §4.3 flags fresh herbs as the thing that closes the gap to a bottled ranch; here they’re doing double duty.

§4.4 — Homemade Onion Soup Mix

Keep the brown sugar. §4.4 explained what those two tablespoons are for — onion powder alone tastes raw and sulfurous, and a little molasses puts back a fraction of what caramelizing a real onion would have done. In the reduced-salt version that job matters more, not less, because there’s less salt smoothing over the sharp edge.

And the optional step in §4.4 stops being optional: chop a real onion and cook it down. Three onions sliced thin, 3 tablespoons of butter, 35 to 45 minutes over medium-low until they collapse to about a cup and go deep amber. That’s forty cents’ worth of onion supplying caramelized sweetness and depth that dehydrated onion can’t produce — the browning simply never happened in the powder. For the dip, add ½ teaspoon of vinegar per 16-ounce tub and chill overnight rather than four hours.

§3.3 — Casserole Starter

Applied across all four jars. Then do the accounting honestly: the cup of shredded cheddar folded into the casserole and the crushed crackers on top are both salty, and in the reduced-salt version they become the dominant source. Swap the crackers for buttered fresh breadcrumbs or a handful of crushed cornflakes, or skip the topping and finish with cheese alone.

This is the jar that needs the least help, because it already has three things working for it that have nothing to do with salt: the cocoa’s bitterness and depth, the brown sugar, and the blooming step. Rinse the canned beans well — the canning liquid is salty and §3.5 already tells you to drain and rinse. Finish with a squeeze of lime if you have one, and let it go the full 25 minutes so it reduces properly.

Be ready for two changes: the bark is less pronounced, because salt is part of what builds it, and the rub-rest is shorter — 30 to 60 minutes instead of 2 to 12 hours, since there’s less salt to drive a brine and a long rest without it just leaves the sugar sitting damp on the meat. Press it on harder than you think you need to.

§4.2 — Classic Steak & Roast Seasoning: do NOT reformulate

This jar is roughly three-fifths salt by weight and there’s no honest way to pretend otherwise, because on a steak the salt isn’t only flavor — it contributes to dry-brining and surface seasoning, pulling moisture to the surface where it dissolves and gets reabsorbed, leaving a drier surface that sears better. Take it out and you’ve weakened that process, not just the seasoning, though the sear itself still depends mostly on a dry surface and high heat.

What to do instead: keep the jar as written, use half as much of it — 1 teaspoon per side instead of a heaping one — and make up the difference with fresh garlic rubbed on, a much heavier hand with the pepper mill, and the full 40-minute rest, which does more for the crust than extra seasoning would.

Part 3 — Reduced-sugar, mix by mix

§6.1 — Homemade Hot Cocoa Mix

The cleanest candidate in the book for a straight swap, because nothing bakes, nothing browns, and nothing has to spread. Replace the 1½ cups of granulated sugar with the same volume of a cup-for-cup granulated substitute — with one caveat and one adjustment.

The caveat: erythritol’s cooling finish is reported to come through most in liquids, where nothing else is competing for the tongue. If you’re going to notice it, a mug of cocoa is where I’d expect it.

The adjustment: sugar is doing a small amount of textural work in that mug, dissolving and giving the drink body, and without it the cocoa reads thinner. Go up to ⅓ cup of mix per mug, or add 2 extra tablespoons of milk powder to the jar.

Third option, and the one I’d try first: just cut the sugar to 1 cup and change nothing else. With a third less sugar the cocoa is the largest flavor left in the mug, which moves it toward drinking chocolate and away from a cocoa packet. If that’s the direction you want, it’s the cheapest change in the section.

§4.6 — Cocoa-Sugar Dessert Sprinkle

Should swap cup for cup with nothing to break — it’s a dry sprinkle landing on an already-hot, already-buttered surface. None of the five surviving uses — toast, oatmeal, pancake dusting, popcorn, mocha paste — asks the sugar to melt or caramelize, so the substitution has nothing to undo in any of them.

One use doesn’t survive: the broiler trick. §4.6 tells you sixty seconds under a broiler turns the sprinkle into a thin crackling glaze — that’s sugar caramelizing, and erythritol won’t do it. It melts, then recrystallizes into a gritty layer as it cools. Skip that one and keep the other five.

§5.3 — Blueberry Muffin Mix

A third off — ¾ cup down to ½ cup — is the cut I’d make first, since the berries bring their own sweetness and their own moisture. At ¼ cup you’re closer to a breakfast bread than a muffin, which some people want and some don’t.

A full substitution works, with one visible cost: the domed golden top that the 400°F blast gives you depends on sugar browning at the surface, so expect paler and flatter. If the goal is less sugar rather than none, there’s a good compromise — keep the teaspoon of real granulated sugar sprinkled over each muffin before it bakes, which is where a very small amount of sugar does the most visible work in the whole recipe, and reduce or replace the rest.

§5.1 — Classic Pancake & Waffle Mix: don’t reduce this one

§5.1 exists because §2.1’s baking mix carries one tablespoon of sugar across three and a half cups and a pancake wants more browning than that allows. Quadrupling the sugar was the point of the recipe. Cutting it back undoes the reason the jar is on your shelf.

So if somebody wants a lower-sugar pancake, use §2.1’s All-Purpose Baking Mix instead — one tablespoon of sugar in the whole jar, an already-good pancake, and a mix you very likely already have.

§2.4 — Banana Bread & Quick Loaf Master Mix

§2.4 already gives you the first step: swap 1 cup of the flour for whole wheat and cut the brown sugar from ¾ cup to ½. Go further if you want — ⅓ cup still reads as sweet, because three very ripe bananas are a substantial amount of sugar in their own right and they’re doing more of the work than the jar is.

This is also the best full-substitution candidate among the baked goods in the book, for a specific reason: the thing substitutes are worst at is holding moisture, and this batter arrives with 1¼ cups of mashed banana and half a cup of fat already in it. The moisture problem is solved before the substitute ever shows up. The applesauce version is even more forgiving.

§6.2 — Brown Sugar Oat Streusel Topping

⅔ cup is as far as I’d cut it. The sugar is what wets and binds the crumbs, so below roughly that point there isn’t enough of it left to clump, and you’re left with powder rather than craggy pieces — worth checking on one pan before you commit the jar.

A full substitution does better here than almost anywhere else, and for the same reason the gluten-free version does: a streusel is supposed to be crunchy, so erythritol recrystallizing as it cools is a feature rather than a defect. You do lose the molasses flavor, which is a real loss — see the molasses note under §6.3.

§6.3 — Chocolate Chip Cookie Mix

The most sugar-dependent texture in the book after the brownie, and §6.3 already told you why: brown sugar’s molasses is what keeps the middle chewy for days, granulated sugar is what gives the edges their crisp caramelized snap. Both of those are sugar behaving as something other than sweetness.

What a full substitution takes away, plainly: sugar melting is what makes a cookie spread, caramelizing is what makes the edge crisp, and molasses is what holds moisture past day one. Lose the sugar and you lose all three. The no-spread part has a fix, and it’s the standard one — flatten each ball of dough with the bottom of a glass before it goes in the oven, since it won’t flatten itself. Chill it 30 minutes anyway; the dough is stiffer and easier to handle cold.

For the brown-sugar flavor: brown-sugar-style versions of the granulated substitutes exist, or add 1 teaspoon of molasses at the bowl if you keep it. A teaspoon across twenty-four cookies contributes almost no sweetness and most of the flavor. Molasses isn’t one of the twelve and it’s a liquid, so it goes in fresh, never in the jar.

The lower-sugar route rather than the no-added-sugar one: drop the ½ cup of granulated entirely and keep the full cup of brown. Brown sugar is the chew and granulated is the crisp edge, so what you’d get is a chewier cookie with a softer edge — a deliberate trade rather than a compromise.

§6.4 — Brownie Mix

Two cups of sugar against one cup of flour — the highest sugar ratio in the book, and the fudginess depends on it. Also worth knowing before you start: that shiny crackly top everyone photographs is dissolved sugar recrystallizing at the surface as the brownie bakes. A substitute won’t give it to you. Expect matte.

Lower-sugar: cut to 1½ cups and add 2 tablespoons of water at the bowl to make up some of the lost moisture. You’re removing a quarter of the sugar from a formula that’s half sugar, so expect it slightly less fudgy and slightly drier at the edges — the ratio is still well inside brownie territory.

No-added-sugar: allulose is the one I’d use, because it’s the only common substitute that browns and stays soft — the two things a brownie needs most. Erythritol recrystallizes as the pan cools; in a streusel that recrystallized crunch is the point, but in something meant to be dense and moist it’s working against the texture you’re aiming at. Allulose tends to brown faster than sucrose, so drop the oven to around 325°F if you’re using it and start checking a few minutes earlier than the original time — this specific formula hasn’t been tested at that temperature, so treat 22 minutes as a starting point, not a fixed number.

§6.5 — Yellow Cake Mix

Reverse creaming works partly because sugar crystals have sharp edges that physically cut air pockets into the butter — that’s a real mechanical job, not just flavor. Granulated erythritol is crystalline too, so the step still works; give it the full two minutes and then some.

1 cup is as far as I’d cut it. Sugar is holding moisture and tenderizing here, so expect a slightly less tender crumb at that level — and below it you’re taking out enough of the recipe’s structure and moisture that I’d call it a different cake, not a lower-sugar one. On a full substitution, expect paler and more fragile, and take the same advice as the gluten-free version: bake it as cupcakes or a sheet cake rather than two 9-inch layers, so the pan carries the structure.

§5.2 — Instant Oatmeal Packets

One cup of brown sugar across thirty packets works out to about 1½ teaspoons per bowl — already a good bit less than a commercial packet, as §5.2 says. Cut it to ½ cup and lean on the fruit versions, where a grated apple or a quarter cup of blueberries does real sweetening on its own.

Or take the cleanest option available: make the base unsweetened — oats, milk powder, salt — and let each person sweeten their own bowl at the table. You’re already portioning thirty bags; this is the mix where per-person control is easiest to build in, and it means one base serves a household where people want different things.

§5.4 — Granola & Trail Mix Base

Careful with this one, because here the sugar is structural in a way it isn’t anywhere else. §5.4 explains that the 3 tablespoons of water dissolve the brown sugar so it can coat the oats — and then that dissolved sugar sets hard as the pan cools, and that setting is what makes clusters. No sugar, no clusters. You get toasted loose oats, which are fine on yogurt and are not granola.

Cut to ½ cup and there’s less dissolved sugar to set, so expect a looser pan clustering only in patches. For a full substitution, erythritol recrystallizes on cooling, so it should form clusters, but a recrystallized sugar alcohol is brittle rather than tacky and I’d expect the slab to shatter small when you break it. If you want them to hold, whisk one egg white into the base along with the oil and water — it’s the standard binder for a low-sugar granola, it adds nothing sweet, and it does the structural job the sugar was doing. One white per sheet pan is the usual starting ratio; run one pan before you convert the whole jar, and note that this route is no longer vegan even though the rest of the substitution is.

§2.1, §2.2, §2.3 — effectively already low-sugar

One tablespoon across three and a half cups of mix is nothing you’d taste. Leave it or drop it; the only thing you’d notice is a slightly paler pancake off the §2.1 jar.

The savory jars — leave them alone

§3.4’s bean base has 2 tablespoons of brown sugar across three pots of soup. §3.5’s skillet starter has ¼ cup across four skillet dinners. §4.4’s onion soup mix has 2 tablespoons across four envelopes. In all three that works out to a fraction of a teaspoon per serving, and it isn’t sweetening anything — §3.4 and §4.4 both explain it as rounding off the sharp edge a salt-and-allium base has on its own. Taking it out costs you flavor and saves you nothing you’d notice.

§4.5’s grill rub is the exception, and it’s a big one: a full cup of brown sugar in a 13-ounce jar, more than half the mix, and the sugar is the entire mechanism of the bark — it melts, goes tacky, then glassy, then dark and lacquered. A substitute won’t do that. Cut it to ⅔ cup for a thinner bark, or take the better answer: for anything you’re cooking without sugar, use the Classic Steak & Roast Seasoning (§4.2) instead. It has no sugar at all, and §4.5’s own introduction explains that the two jars were designed as opposites for exactly this reason — one for the screaming-hot pan, one for the low indirect fire.

Part 4 — Dairy-free & vegan, recipe by recipe

Milk powder, jar by jar

Thirteen jars carry nonfat dry milk powder: §2.1, §2.2, §2.3, §2.4, §3.1, §3.2, §3.3, §4.3, §5.1, §5.2, §5.3, §6.1, §6.5.

Powdered coconut milk, 1:1 by volume, checked against the product’s own reconstitution guidance. Three consequences, all covered in the book: it carries fat (halve the stamp — a 12-month jar becomes 6 months; §3.2 and §4.3, already at 9 months, become 4-month jars), it tastes faintly of coconut (which chocolate, banana and spice cover and the savory jars don’t), and it doesn’t brown the same way (compensate at 400°F instead of 375°F, or a teaspoon of sugar per batch at the bowl).

Unsweetened soy milk powder, 1:1 — the closest match on paper for the savory jars (§3.1, §3.2, §3.3, §4.3): its protein content is nearest to nonfat dry milk, which is what does the thickening in a cream sauce, and it carries no flavor of its own the way coconut does. Harder to find, worth the search if one of those is a jar your household lives on.

Rice milk powder is mild and widely available but low in protein, and protein is what gives a sauce body — so it should be fine in the sweet jars and short of creamy in anything built on a white sauce.

Non-dairy “creamer” powders — the ones sold by the coffee. Read the panel: corn syrup solids and refined vegetable oils, which is precisely the ingredient list this book has spent six chapters arguing against. You can use them. I wouldn’t.

The leave-it-out option, in grams

For five jars, taking the milk powder out and replacing it with an equal weight of flour is the right answer, and it’s free — the jar’s volume and every activation ratio stay exactly where they were. Then use a non-dairy milk in place of the water at the bowl.

What you’re trading: §2.1’s whole argument for putting milk powder in the jar was that a mix needing fresh milk is a mix you can’t use on the morning you’re out of milk. If your household keeps a carton of oat or soy milk in the fridge anyway, it’s no loss at all.

Fat at the bowl

Solid vegan butter sticks are usually the closest functional 1:1 replacement for butter in a recipe that cuts fat in cold or creams it — the cut biscuits in §2.2, the streusel in §6.2, the cookies in §6.3, the cake in §6.5. Buy the ones sold in stick form rather than the soft tub spreads; tubs carry more water, and that extra water makes a slack dough and a greasy streusel. Fat and water content still vary by brand, so texture-sensitive recipes are worth testing in a half batch first.

Neutral oil or refined coconut oil substitutes 1:1 by volume in most of the recipes that call for melted butter, and several already say so themselves: §2.4’s banana bread (“melted butter or neutral oil”), §5.1’s pancakes, §5.4’s granola. §6.4’s brownies already melt the butter, so ¾ cup of oil substitutes on the same logic — what you give up is butter’s milk solids and the richness they carry, which is a small share of a recipe this chocolate-heavy. Oil is essentially pure fat where butter carries some water and milk solids too, so this swap works best exactly where a recipe already treats melted butter as interchangeable with oil, rather than as a universal rule.

Where it doesn’t substitute cleanly:

§2.2’s cut biscuits. The recipe works by keeping visible pea-sized flakes of solid fat in the dough — those flakes are the layers. Refined coconut oil chilled hard is technically solid, but it’s brittle: it shatters into shards instead of smearing into sheets, and you get a crumbly biscuit rather than a layered one. Vegan butter sticks are the right tool here.

§3.2’s mac and cheese. The cheddar isn’t a garnish, it’s the recipe — §3.2 was straight with you that the jar gives you the creamy base and real cheese does the actual work. Most non-dairy cheddars are built on starch and oil, and they thicken rather than melt and stretch. If you use one, add it off the heat exactly as §3.2 instructs, expect a thicker and less stringy sauce, and loosen it with a splash of hot water. The dry mustard or hot sauce that §3.2 suggests at the end is worth more here than in the dairy version — the sauce needs the sharpness.

Milk and sour cream. For milk in §6.5’s cake batter: any unsweetened non-dairy milk, 1:1, and soy is the sturdiest choice because its protein content is closest to dairy. For sour cream in the two dips (§4.3 and §4.4): the cultured coconut or cashew sour creams work, they’re tangier than dairy sour cream, and you’ll want to pull back slightly on the vinegar in the ranch dressing.

Flax eggs, recipe by recipe

The technique. One tablespoon of ground flaxseed stirred into 3 tablespoons of water. Let it stand 5 to 10 minutes, until it thickens to roughly the consistency of a raw egg white and slides off the spoon in a sheet rather than in drops. That’s one egg. Scale it directly: two eggs is 2 tablespoons of flax and 6 tablespoons of water.

Ground, not whole. Whole flaxseed barely gels — the gel comes from the soluble fiber on the seed coat, and it needs the seed broken open to release it effectively. Grind it yourself in a coffee or spice grinder, or buy it already ground as flaxseed meal. Ground flax carries a lot of oil and goes rancid faster than you’d expect, so keep the bag in the freezer and smell it before you use it: fresh ground flax smells faintly nutty, and old ground flax smells like paint.

Ground chia can also work as a binder in the same 1:3 ratio, though its gel is generally firmer and its texture differs somewhat from flax. The seeds show as dark specks unless you grind them fine.

The rule: one-egg recipes convert well; three-egg recipes are the hard ones. A flax egg binds and adds moisture, and that’s the whole list — it does not supply the air a beaten egg holds, the structure egg protein gives when it coagulates, or the yolk’s fat and emulsifying power.

Pancakes (§2.1, §5.1) 1 1 flax egg The best case for flax. One egg in a thin batter is doing binding more than lift or structure, which is exactly the job flax can take over — expect slightly denser and slightly more tender. Rest the batter the full 5 minutes, more if it’s also a gluten-free conversion.
Chocolate chip cookies (§6.3) 1 1 flax egg Should convert well; the dough is mostly butter and sugar and the egg was never the star. Chill it 20 to 30 minutes instead of 10, because a flax egg holds the dough together less firmly and it spreads more.
Banana bread (§2.4) 2 2 flax eggs The multi-egg recipe with the least riding on the eggs: the mashed banana is already doing binding and moisture work. Expect a denser, moister loaf. Add 5 to 10 minutes to the bake and go by the skewer.
Blueberry muffins (§5.3) 2 2 flax eggs Should hold, with a denser crumb and less dome — flax replaces the binding but not the air the eggs were holding. Keep the 400°F-then-375°F trick; it matters more here than in the original, since there’s less structure setting up early.
Brownies (§6.4) 3 2 flax eggs + 2 Tbsp oil Three flax eggs is 3 Tbsp flax and 9 Tbsp water — a lot of moisture and no structure, which points straight at a gummy brownie. The 2-plus-oil ratio is reasoned from what the third egg was contributing, so run it as a half batch in an 8×8 first. Expect something dense and closer to a chocolate truffle bar: a different thing, not necessarily a worse one. No crackly top.
Yellow cake (§6.5) 3 commercial powdered egg replacer + ½ tsp baking powder The hardest conversion in the chapter. Three flax eggs put a lot of gel into a batter that needed lift and structure instead, and a dense, damp layer that sinks in the middle is the predictable outcome. The potato-and-tapioca-starch replacers include leavening, so unlike flax they put back a little of the lift. Bake as cupcakes or a sheet cake.

Meat and fish at the activation

Four dishes have meat or fish in the activation rather than the jar.

§3.4’s bean soup is the easiest — vegetable broth, skip the ham hock and bacon, and crush a cup of the beans against the pot for the body the ham was giving. It’s the best jar in the book for this and it needs nothing bought.

§3.5’s beef and bean skillet works with a pound of mushrooms, chopped and browned hard in the skillet until the pan goes dry and the edges are genuinely brown, in place of the ground beef. Then bloom the mix in a tablespoon of oil exactly as written. The cocoa’s job in that jar — filling in the hollow middle of the flavor — is doing more work here, since mushrooms bring less of that depth than browned beef does.

§3.3’s casserole takes 2 cups of chickpeas or white beans in place of the tuna or chicken, and more vegetables.

Chapter 4’s rubs and seasonings, meanwhile, are as good on cauliflower slabs, potatoes and mushrooms as they are on meat — §4.2 already tells you the roasted-potato use may become the main one.

12-Ingredient Master Shopping List

The only twelve things that ever go in a jar, in the quantities the book's starter tiers assume.

    The master list

    The twelve foundation ingredients, and nothing else, go in a jar. Everything fresh — eggs, butter, oil, milk, fruit — is added at the bowl, exactly as with any boxed mix. The checklist above ticks off in this browser and prints clean. The three tiers are the book’s starter budgets from Chapter 1 §1.6 — $25 tests whether your family eats this food, $50 is the tier the book is built around, $100 is the unit-price play — and the quantities are what it takes to build one jar of every mix that tier unlocks, summed straight from the Recipe Cards and rounded up to a package you can actually buy. Pick the tier that matches what you’ll build in the first month, not the one that sounds most thorough; most households settle at eight to twelve active jars.

    Two things the book says about buying that are worth repeating on the list itself. Baking powder is the one ingredient §1.4 tells you never to buy in bulk: a dead can ruins a year of jars, and by USDA FoodKeeper figures it holds about six months unopened and about three months opened for best quality. Oats are a buy-what-you’ll-finish-this-season ingredient, for the reason under “Buying and storing bulk oats” below. The rest scale well — the alliums spectacularly so at restaurant supply — and the price-per-ounce habit from the Personal Price Book is how you decide how far to scale.

    Restaurant supply. Access rules vary by chain and location — Restaurant Depot, WebstaurantStore, Smart & Final and regional cash-and-carry outlets. Many are open to the public or require only a free business membership. Worth one phone call before you drive out, since this is the channel where the garlic-and-onion-powder economics actually flip: three-ounce supermarket jars run $18–22 a pound; a five-pound restaurant-supply jug runs $4–6. Illustrative ranges checked at major U.S. chains in 2026, not fixed prices — check the unit price at the store you use.

    Repackaging bulk buys

    Repackage the day you get home, not the weekend you get around to it. A 25-pound paper sack of flour on a garage floor is an invitation to pantry moths and humidity both. Split it into gallon jars, a food-grade 2-gallon bucket, or heavy freezer bags within a day.

    Home food-storage guidance commonly recommends freezing dry goods before you repackage them, to help control pantry pests that may have come in with the grain — a few days at 0°F is the range extension services point to, and it costs nothing.

    Buying and storing bulk oats

    Cool, airtight storage slows flavor loss significantly compared with a warm bag opened and closed all summer on the counter. Buy oats in quantities you’ll finish in a season and keep the bulk bag cold.

    Why oats behave differently from flour on the shelf. An oat flake has been pressed flat for the express purpose of increasing its surface area, and its natural oil sits on the outside of that flake. That oil is what gives good oatmeal its sweet, faintly nutty smell straight out of the canister — and what turns flat and crayon-like when it oxidizes. Refined all-purpose flour carries much less natural fat, which is most of why the Chapter 2 baking mixes hold a year while two of the four Chapter 5 stamps say six months.

    A restock runs under $30 once you’re past the first shop, and the reason is that you’re buying two or three ingredients, not twelve. Two columns on the back of an envelope, or in the box above:

      Chapter 1 §1.1 sets out the bench: a digital scale, a six-quart bowl, a balloon whisk, a canning funnel, measuring cups and spoons, a fine-point permanent marker, and a fine-mesh strainer. About forty dollars if you own none of it, and most kitchens own half. The checklist above ticks off in this browser. Three items carry a spec the book no longer has room to spell out:

      Digital kitchen scale. Beyond the flat platform, the tare button and one-gram precision the book asks for, check one more thing in the store: the display should not sit directly underneath the weighing platform. On cheap scales it does, and once a wide mixing bowl is on the plate you can no longer read your own numbers. A display on a lip, an arm, or a pull-out tab solves it.

      Large mixing bowl. Six quarts minimum. Stainless over glass for two reasons: it doesn’t chip, and it washes and dries faster between back-to-back batches — which matters because the wash-up between mixes is the thing that doubles the length of a batching session.

      Permanent marker. Fine point, and specifically the kind rated to write on tape and glass without smearing. A standard office marker beads on a jar and rubs off on a sleeve.

      Jars and lids

      Glass is the book’s default — not because it’s scientifically superior, but because it’s durable, easy to label, and easy to inspect. Regular-mouth jars for gifting (they have a neck for twine); wide-mouth for anything you scoop from daily. Lids compared:

      Freezer-weight bags are for two jobs only — single-batch portioning (one bag of pancake mix per Saturday morning) and packing mixes into a cooler, camper or cabin. Press the air out from the bottom up before you seal, and stand the bags upright in a shoebox so they don’t slump into an unstackable pile.

      Small kitchen, RV, apartment

      Vertical space. Measure the gap between shelves, not the cabinet. Jar heights: quart ≈ 6¾ in · pint ≈ 5½ in · 4-oz jelly jar ≈ 2½ in. Clip-on under-shelf wire baskets (~$8 a pair) hold four jelly jars each in the dead air above a short jar. A door-mounted rack does the same job on the inside of the cabinet door — it’s the best home for Chapter 4’s seasoning blends in a cabinet with no spare shelf gap. Buying jars new for a rectangular shelf: square beats round. Every round jar leaves four empty corners, and across a small cabinet that adds up to a whole jar’s worth of nothing.

      Flat storage, when even a pint won’t fit. Heavy freezer-weight vacuum pouches or resealable stand-up sachets, filled with a half batch and pressed thin, stack like files — the shelf that held four quart jars holds close to twenty.

      A pouch doesn’t index itself. Three habits:

      1. Write the label along the bottom edge, before you fill the pouch.
      2. Stand them upright in a shoebox so they read like a card index.
      3. Split by use — jars for the mixes you scoop from repeatedly, pouches for the ones that go into the bowl whole (the Skillet Soda Bread and Banana Bread mixes are the two clearest examples).

      Sealing tools, for the long-term shelf

      • A $20 hair straightener is the cheap tool that genuinely works for Mylar — clamp and draw it slowly across the bag, then run it again a quarter inch below the first pass.
      • A household clothes iron on a wooden board works too, on the cotton setting, pressed against a strip of parchment.
      • Past about twenty bags, buy an impulse sealer. They run $25 to $40 and they’ll do a straight seal every time without you having to think about it.
      • A vacuum sealer’s $10 jar attachment is the part of that system worth owning — for the dairy-heavy jars you can’t Mylar. The bags themselves are polyethylene and oxygen-permeable, which makes vacuum sealing a months tool rather than a years tool.

      The time budget

      Add up the mixing time each chapter states for its own recipes and the whole book comes to about three hours of whisking — twenty-four mixes across twenty-seven containers.

      Friday night — fifteen minutes

      Finding out your baking powder is dead on Friday night costs you a trip to the store. Finding out in March costs you a batch of biscuits.

      Saturday, session one — the baking shelf (Chapter 2, ~40 minutes)

      That order runs driest and blandest to wettest and sweetest, which is why all four can be whisked in one unwashed bowl — stray flour dust in banana bread mix is invisible, and brown sugar residue in your baking mix is not.

      Saturday, session two — the breakfast shelf (Chapter 5, ~35 minutes)

      It goes second because it works the same flour-and-sugar territory the baking shelf just left in the bowl. Store the finished stack of packets inside one larger airtight container rather than loose in a drawer; a thin bag on its own doesn’t hold up over months the way a jar does.

      Saturday, session three — the dessert shelf (Chapter 6, ~30 minutes)

      Chapter 6’s printed section order starts with hot cocoa, but its bowl advice is “flour to cocoa, driest to richest,” and the two pull in opposite directions. For a full weekend run, follow the bowl. Cocoa dust in a yellow cake mix shows. Flour dust in cocoa doesn’t.

      Sunday afternoon — the part nobody schedules

      The one-morning version

      The shelves are independent. If you have one free morning rather than two days, build Chapter 2 and Chapter 3 — nine mixes, about ninety minutes. The seasoning shelf takes twenty-five minutes and can happen any weekday evening while something else is in the oven. The dessert shelf can wait until you want it.

      Allergen exception: a gluten-free or other allergen-specific adaptation from Chapter 8 gets its own clean session, with tools that haven’t touched wheat flour that day. Never fold it into the one-unwashed-bowl flow above.

      Sub-portioning a jar into single-dinner units

      Two mixes in Chapter 3 are worth breaking down further than the recipe card does, for the same reason the casserole starter ships in four half-pints: on the night you need dinner, you don’t want to be measuring.

      Weigh, don’t eyeball. Salt is more than a tenth of the casserole mix by weight, so a portion that runs heavy or light lands directly on the seasoning of a whole 9×13. Fill each jar to the shoulder: less air stored with the mix is part of what holds the stamp at a full year.

      The three batching sessions, for restocking

      Once the shelf exists, you don’t rebuild it all at once. You restock in sessions that share an open jug and a bowl:

      • The allium session. Gravy & Sauce (§4.1), Onion Soup (§4.4), Ranch (§4.3), Bean Soup Base (§3.4). One jug of onion powder open, one of garlic, and §4.7 clocked the whole Chapter 4 shelf — six jars — at about twenty-five minutes.
      • The flour session. All-Purpose Baking (§2.1), Buttermilk Biscuit (§2.2), Skillet Soda Bread (§2.3), Pancake & Waffle (§5.1). Driest to sweetest, one bowl, no washing between. The Chapter 2 opener runs four of these in about forty minutes.
      • The sweet session. Chocolate Chip Cookie (§6.3), Yellow Cake (§6.5), Brownie (§6.4), Hot Cocoa (§6.1) — in that order, because anything with cocoa in it goes last or the pale jars pick up dust.

      A single jar still makes sense the first time you try a mix, or for a half-batch of an adapted recipe you’re testing. The batching rule is about restocking efficiently; it is not a rule against ever making one jar.

      The monthly restock: thirty minutes

      The book explains why the routine exists — drift, not difficulty. This is the half hour itself. Set a monthly reminder; the checklist resets itself each time you open it after thirty days.

      Minutes 0–5 — pull everything forward

      Nothing you do in the bowl brings a spent leavener back.

      A dead jar is not garbage. Weak leavening is a quality issue, not a safety verdict on its own — if the mix otherwise smells and looks normal, with no sign of moisture, pests or mold, it’s still fine to eat. Use it where the rise matters less, like pancakes or dumplings, and don’t spend it on biscuits.

      The leavening potency check — one card

      The book teaches this test twice (§1.3 on the raw ingredient, §2.5 on a stored jar). Once, clearly, for the cabinet door:

      This is a potency check on the leavening, not a food-safety test. If a jar smells off, the fizz test is not the tiebreaker.

      Long-Term Storage & the 30-Day Shelf

      The book explains why you’d bag at all, which mixes are worth bagging and which are not, the three-tier structure, and why it refuses to attach a year count to a blended mix. This page is procedure and sizing: what to do on bagging day, and how much of each jar a month actually takes.

      Safety lives in the book, not here. Chapter 7 §7.3 carries the carbon-monoxide guidance, the USDA figures for how long a refrigerator and freezer hold without power, and the “Cold chain?” reordering for the 30-day plan. Read it there before you rely on any of this. The one line worth repeating because Week 3 below mentions a grill: charcoal and gas grills, camp stoves and generators are for outdoors only — never inside a house, garage, basement or closed trailer, and at least 20 feet from windows, doors and vents even outside.

      Part 1 — Mylar bagging: the full procedure

      Choosing the bag

      Choose a food-grade foil-laminate pouch built for long-term dry-food storage, with enough puncture resistance for what you’re storing. A thin, flimsy bag is more likely to puncture on a corner of dry pasta or a bucket rim, and you won’t know until you open it.

      Sizing the absorber

      Absorber sizing depends on container volume, product density, headspace, and residual oxygen — always follow the absorber manufacturer’s sizing chart rather than a single rule of thumb. The table below is a rough illustration of how the sizing logic works, not a formula to apply blindly.

      Rolled oats need more absorber capacity than flour because a flake traps far more air around itself than a flour granule does — a gallon of oats is mostly the space between the oats. Anything you’ve packed down tight, or any jar you’ve filled to the shoulder with almost no headspace, needs less. When in doubt, follow the absorber manufacturer’s guidance rather than improvising — an undersized absorber leaves oxygen in the bag with no easy way to tell.

      Working fast: the five-step sequence

      Oxygen absorbers start working the second you open the outer package, which means the sequence matters more than the technique.

      1. Fill and line up every bag first, tops open, before you cut the absorber pack. Label each one on the outside with a permanent marker while it’s still empty and flat — writing on a full bag is a losing proposition.
      2. Heat-seal each bag across the top, leaving a two-inch gap at one end. Do this before the absorbers go in.
      3. Cut the absorber package. Work down the line, dropping one into each bag through the gap.
      4. Finish the seals. All of them, then check your count against the number of absorbers you opened.
      5. Anything left over goes immediately into a small canning jar with a two-piece lid, tightened down. Not a zip-top bag — a zip-top bag will not hold them, and a strip of absorbers left on the counter overnight is a strip of small rusty bricks in the morning.

      Sealing tools

      Headspace: leave yourself a way back in

      Leave two or three inches of empty bag above the seal. That’s your opening allowance: you cut below the seal, use what you need, and re-seal underneath the cut. A bag sealed right at the fill line can only be opened once.

      Where the bags stand

      Mylar keeps oxygen out; it does not keep teeth out, and a mouse will chew through a bag on a garage floor without much trouble. If the storage location isn’t a clean interior closet, stand the bags inside a food-grade bucket or a hard-sided tote.

      What a firm bag does and doesn’t tell you

      Some bags become noticeably firmer as the oxygen is removed — a properly sealed bag doesn’t collapse into a vacuum, it just draws in and goes firmer over the first twelve to twenty-four hours in many cases. But appearance alone isn’t a reliable seal test: headspace, bag flexibility, product density, and absorber size all affect how firm a bag ends up looking. If you want more certainty than a visual check gives you, that’s a reason to be generous with absorber size and careful with the seal itself, not to rely on firmness as proof.

      Part 2 — Vacuum sealing a powder: the cuff

      Fine powder gets pulled up the bag by the vacuum and into the seal channel, and a seal with flour in it looks fine and fails within a week.

      The fix: fold the top four inches of the bag back into a cuff before you fill it, so the seal zone stays clean, then unfold it just before sealing.

      The book keeps the principle: vacuum-sealer bags are polyethylene laminate and therefore oxygen-permeable, which makes vacuum sealing a months tool rather than a years tool — and the $10 jar attachment is the part of the system worth owning, for the dairy-heavy jars you can’t Mylar.

      Part 3 — The full 30-day quantity table

      Thirty days, family of four. The book keeps only the four lines that run deeper than people expect (§2.1, §2.3, §5.1, §5.2) plus the reasoning; this is the whole shelf. Tick what you have.

      Part 4 — Weeks 2 and 3, written out day by day

      The book keeps Week 1 (the cycle as written), Week 4 (the jar-and-can week) and a prose digest of what changes in between. These are the two middle pages.

      Week 2 — the same shape, every jar’s second use

      • Day 1 → the same skillet, in bowls instead of over rice, with rice saved for later in the month.
      • Day 2chicken casserole rather than tuna (§3.3), with canned chicken.
      • Day 3lentil soup, no soak — the third way to use §3.4 — with soda farls instead of the loaf, which is the stovetop version of §2.3 and needs no oven at all.
      • Day 4 → if you still have cheese, cheese sauce for vegetables (§3.2’s third use) poured over rice and a can of green beans; once the cheese runs out, the same base thinned into a plain white sauce over rice with canned vegetables covers the same slot.
      • Day 5 → cream of mushroom (§3.1) over egg noodles.
      • Day 6pot roast with the Onion Soup Mix (§4.4) if you have meat and a covered pot; French onion soup with toasted soda bread if you don’t.
      • Day 7 → pancakes for dinner (§5.1), which is a real meal and also a morale decision.

      Week 3 — the seasoning shelf comes forward

      By now the dinners want variety more than they want calories. The three protein-based nights below assume you still have some meat to season — from a chest freezer that’s stayed cold, meat bought or bartered fresh during the week, or canned meat worked into the same seasoning. If none of that applies, the Steak & Roast Seasoning and the Grill Rub both fall back to their vegetable and potato uses, and the week leans harder on the Chapter 3 mixes instead.

      • Ranch chicken (§4.3), 2 tablespoons per pound, roasted or pan-seared.
      • Steak & Roast Seasoning (§4.2) on roasted potatoes, which is that jar’s third listed use and the one that matters most when there’s no steak.
      • Brown Sugar & Garlic Grill Rub (§4.5) on pork or chicken thighs, over charcoal — outdoors, per the note at the top of this page — if the power’s out and you’re cooking on a grill anyway, this jar is suddenly the most useful thing in Chapter 4.
      • Green bean casserole (§4.4 stirred into a batch of §3.1) as a full dinner rather than a side, with rice under it.
      • The Chapter 3 mixes fill the rest of the week on the same shape as Week 1.

      Host a mix party: the run-of-show

      The book keeps the two rules that prevent failure — a scoop never crosses between bins; label the jar before the next one gets filled — and the principle that everybody builds the same mix at the same time. This is the full station setup and the timeline the host tapes to a cabinet door.

      The four stations

      Station 1 — Weigh. One or two scales, the ingredient bins for the current mix only, and a dedicated scoop living in each bin. Never let a scoop cross between bins; a scoop that’s been in the brown sugar and goes into the flour brings moisture with it. Tape an index card with that mix’s weights in grams to the table so nobody has to hold six numbers in their head over the noise of eight people talking.

      Station 2 — Whisk. Bowls and balloon whisks, at least four of each so there’s no queue. Ninety seconds of hard whisking per bowl, per §1.1. This is the station that needs the most floor space, because a six-quart bowl and a swinging elbow take more room than people plan for.

      Station 3 — Fill. Funnels and the guests’ own jars. Fill to the shoulder, tap the jar twice on the table to settle it, seal.

      Station 4 — Label. Markers, tape or labels, and one person who does nothing else. Label the jar before the next one gets filled — never at the end, when everyone is tired and eight identical jars of beige powder are sitting on a table with nothing to distinguish them. This is the easiest way to end an afternoon with jars nobody can identify.

      The jar moves. The people stay.

      What to have on hand

      Multiply the recipe by the number of guests, then add ten percent, because some of it lands on the table and some of it misses the funnel. The calculator above does that for three mixes; here are the worked examples at eight guests, so you can see the line item that will surprise you — there’s one in each.

      The baking mix eats half a ten-ounce can of baking powder — the one ingredient §1.4 told you never to buy in bulk, and the one you’re most likely to run out of mid-party. The cookie mix takes very nearly a whole four-pound bag of brown sugar. And the cocoa column is why hot cocoa is the priciest jar in Chapter 6: two and a half pounds of milk powder for eight pints.

      The timeline

      Splitting the money — three models

      The assignment list — best for a first party. Each guest is told one ingredient to bring, in a stated quantity, and everyone shows up having spent roughly the same. Nobody fronts money, nobody has to trust anyone’s arithmetic, and the host doesn’t spend a Saturday morning at three stores. The cost is that somebody will forget the salt.

      Host buys, everyone settles up after — best once it’s a habit. One shopper, one receipt, one trip to the restaurant supply store where the actual savings live, divided by heads at the end. This is the only model that captures the five-pound-jug economics, which is the whole reason for the party. Do it once the group has proven it shows up.

      Flat fee per head. Eight to twelve dollars a person, host handles everything, no receipts and no arithmetic. It’s the cleanest socially and the least precise financially. Perfectly good for a group that would rather not talk about money.

      Teaching kids to mix

      The rule that comes before the chart

      Never let a child taste raw flour, a dry mix built on flour, or raw dough or batter. Flour is a raw agricultural product. The FDA is specific that raw flour can carry bacteria like E. coli or Salmonella, the same way raw dough can, and grinding or bleaching doesn’t kill anything — only baking or cooking does. This applies to the adult holding the spoon as much as to the child watching. Salt and sugar are the safe exception; anything flour-based, and anything with raw egg in it once activated, stays off-limits until it comes out of the oven or off the griddle.

      What a kid can actually do, by age

      These are typical starting points, not developmental rules — every kid and every household is different, and the right age to hand something over depends on maturity, prior kitchen experience, and your own comfort level more than the calendar.

      6–8 Leveling a dry measuring cup with a straight-edged spatula or bench scraper. Whisking solo for a timed 90 seconds. Reading a recipe line aloud while an adult weighs. Writing the mix name on the label. This is where measuring starts, and where the level-off habit is worth teaching properly rather than tolerating heaping scoops.
      9–12 Working the scale with the tare button. Pressing baking soda or cocoa through a strainer. Writing the full label — name, made-on, best-quality, “just add.” Building a simple mix start to finish with an adult in the room. The scale is the unlock. A ten-year-old who can tare a bowl can follow any recipe in this book by weight, which is more precise than most adults working by cup.
      13+ Any mix in the book, including the leavened ones, with the level of supervision your household is comfortable with. Reading the shelf-life chart and deciding what needs remaking. At this point the constraint is interest and demonstrated skill more than raw capability.

      Whisking. A balloon whisk in a narrow bowl at five years old is a mess-making machine, because the arc of the whisk hits the wall and throws powder up and out. Give a young child a wide, shallow bowl and half the volume an adult would use. The physics change completely and so does the amount of flour on your floor.

      Labelling is not a consolation prize. §1.2 established the label as the thing that makes the entire system function — a jar without one becomes, within about three weeks, a jar nobody will risk. Handing a child the label is handing them the load-bearing part. Say so.

      First projects, in order of how well they land

      1. Homemade Hot Cocoa Mix (§6.1) — four ingredients, no leavening, forgiving proportions, one strainer step, and a payoff that arrives ten minutes after the lid goes on. Warning: milk powder goes in last, bowl tilted away, or a fast whisk puts a cloud of it on a small person’s face.
      2. Granola Base (§5.4) — the single best kid job in the book: rubbing oats, brown sugar and salt together by hand for two minutes. A child can do the whole procedure. The baking (300°F oven, hot sheet pan) is an adult’s job.
      3. Chapter 4 seasoning blends — nothing rises, nothing sets, nothing collapses if a measurement is a little off. Salt needs an adult double-checking; the rest tolerates a light hand. Classic Steak & Roast Seasoning (§4.2) is two minutes of work; Cocoa-Sugar Dessert Sprinkle (§4.6) is three ingredients that go onto toast the same morning.
      4. Hearty Bean Soup Base (§3.4) — for a slightly older kid who wants to make something for dinner rather than dessert: five ingredients, hand-rubbed, an eighteen-month stamp, and it turns into a pot of soup that feeds the family.

      Projects to save for later, and why

      • Anything with a baking soda strainer step — Buttermilk Biscuit (§2.2), Skillet Soda Bread (§2.3). An unsifted lump of baking soda is soapy and bitter, and because it stays a lump it lands in one bite of one biscuit rather than spreading across the batch. A child cannot reliably tell “all the way through” from “mostly through,” and there’s no checking afterward. Age nine and up, or do the strainer step yourself and hand them everything else.
      • Anything where the leavening ratio is tight — All-Purpose Baking Mix (§2.1) at one and a half tablespoons of baking powder against three cups of flour; Blueberry Muffin Mix (§5.3) is no more forgiving. A heaping tablespoon instead of a level one is a twenty-five percent error in the one ingredient with no tolerance. Level-off technique first.
      • Instant Oatmeal packets (§5.2) — thirty identical measurements into thirty bags. An endurance problem rather than a skill one, and it ends somewhere around packet nine. Fine for a teenager with headphones on.
      • Mac & Cheese Powder (§3.2) — half milk powder by volume, which means it’s half cloud, at counter height, in somebody’s face.

      The three rules, for the fridge

      1. Ingredients are for measuring, not tasting. (Full rule at the top of this page. Salt and sugar are the exception — taste them side by side so they learn the difference, since they look identical in a bowl.) Skip the baking soda taste test entirely: no safety issue in a small taste, no reason for it either, and it’s an easy habit to just not start.
      2. Dry hands, always, and no fingers back in the jar. Not for reasons of germs — §2.5 and §3.6 both make the point that a wet scoop kills a jar faster than age does. Nothing wet touches the mix, including you.
      3. Their jar, their name, their choice. One mix per session, not four. A jar with their handwriting on it, on the shelf, at their eye level. Under twenty-five minutes for anyone under seven. The mess isn’t the failure mode — boredom is.

      Casserole Starter (§3.3) — build-your-own grid

      The book keeps the method and two named versions. The full option grid:

      Doneness cue for the 9×13: 25–30 minutes at 375°F. It’s done when the sauce bubbles at the center as well as the edges — push a spoon into the middle and look — and the top has browned in patches. Rest 5 minutes before serving so it sets enough to cut.

      Chicken pot pie with a biscuit top — the long version

      The book gives the ratio change and the steam rule. The rest of the detail:

      • Sauce arrives thicker because there’s no pasta in the dish drinking up liquid in the oven: whole jar into 2 cups of cold broth rather than 2½, same 3 Tbsp butter, whisk 4–5 minutes.
      • Off the heat, fold in 3 cups diced cooked chicken and 2 cups vegetables — frozen peas and carrots straight from the bag, or whatever’s in the crisper cut small enough to cook through in half an hour.
      • Biscuit top: one batch from the Buttermilk Biscuit Mix (§2.2) or the All-Purpose Baking Mix (§2.1), mixed a touch wetter than usual so it slumps and spreads. Eight rough spoonfuls, gaps left between them.
      • Vessel: buttered 9×13, or a deep 10-inch skillet.
      • Full doneness cue: 400°F, 25–30 minutes, until the biscuits are deep gold and split across the top and the filling bubbles up around their edges.

      Bean and lentil variations for the Hearty Bean Soup Base (§3.4)

      The base always goes in the same way and at the same point: ⅓ cup whisked smooth into 1 cup of the hot broth, stirred back into the pot, 10 more minutes at a gentle simmer.

      Cheese sauce for vegetables (§3.2’s third use)

      Shorter, thicker version of the Mac & Cheese base: ⅓ cup mix, ¾ cup cold water, 2 Tbsp butter, 4 oz cheese. It has to cling to a floret rather than coat a noodle.

      Targets: steamed broccoli or cauliflower · a split baked potato · a plate of roasted carrots.

      Finishers that aren’t among the twelve

      Kept out of the jars on purpose, but worth a line if you already own them. Anything outside the Foundation Twelve goes in at the bowl or in the liquid, never into the jar — cinnamon in the cocoa pot, cinnamon in the oatmeal bowl, black pepper on the steak seasoning, vanilla in the cookie dough. Two reasons: ground spices gradually lose aroma after opening, and a spice stored against brown sugar in a sealed mix clumps besides. Added at the bowl, an outside ingredient costs nothing on shelf life and the recipe works either way.

      Freezer-flat portioning

      Applies to the Beef & Bean Skillet (§3.5) and to anything else you cook in a full batch and eat in quarters.

      • Cool the batch, press it into a zip-top bag, freeze it lying flat, not standing up.
      • A flat bag has far more surface for its volume than a block does. It loosens in a low skillet in minutes; the same portion frozen in a block sits there long enough for the bottom to catch before the middle gives.
      • Flat bags stack like files in a freezer door. A rounded container never does.
      • Window: 3 months. A weeknight dinner becomes a reheat instead of a cook.

      Granola: baked vs. the unbaked base

      Adding dried fruit shortens the window because moisture migrates out of the fruit and into the oats, and the clusters you worked for can go soft within days. To keep granola longer, freeze it plain and add the fruit and chocolate by the bowlful as you eat it. It thaws in four minutes on the counter and comes back crisp.

      The cocoa paste step, in full

      Cocoa powder doesn’t dissolve well in a large volume of liquid all at once; it needs a concentrated, hot, well-stirred head start. That’s the whole reason every cocoa activation in the book begins with 2–3 tablespoons of just-boiled water and a smooth paste before the rest of the liquid goes in. Stirred straight into a full mug — or worse, into cold milk — the powder barely wets and leaves a gritty layer at the bottom.

      Troubleshooting: cocoa tastes thin no matter how much mix you add → the fix is the paste step, not more mix.

      Scaling a mug to a slow cooker. The slow-cooker cocoa is the single-mug ratio scaled up, nothing more: 2 cups mix into 1 cup hot water (the same paste), then 5 cups of milk. Keeping the mix-to-liquid ratio identical is what makes any of these jars scale cleanly.

      Portioning single-serve packets

      Thirty snack bags at ⅓ cup apiece is about eight minutes of work. Set the bags out open and standing before you start blending oats — the budget assumes you aren’t hunting for them mid-batch. Store the finished stack inside one larger airtight container rather than loose in a drawer; a thin bag on its own doesn’t hold up over months the way a jar does.
